Harvest
We harvest our Arbequina in mid-October, when the olive is in veraison. In respect to the olive tree and to insure the best quality of our product, we harvest the olives entirely by hand, gentley pulling the olives off the branch and into the basket.
Processing
Once the olives have been picked they are immediately brought to the mill. We follow rigorous quality controls during every stage to produce the olive juice for Organic Extra Virgin, first cold press.
Where we are
We are located inside a Nature Park, 850 meters above sea level. We enjoy a continental climate with a hint of Mediterranean influence. The soil is limy and permeable which facilitates the cultivation of olive trees and enhances the quality of the oil.
Tasting notes
The Cornicabra and Frantoio varieties make up the coupage by Oli Oli, after having pampered the olive grove the entire.
In the nose, its fruitiness of intense, green olive is an explosion of sensations of citric alternating with wild red berries opening the way for a discrete background of vegetable aromas typical of Cornicabra.
In the mouth the cheeky notes of citric hide a sweet calm entrance, with only a hint of bitter followed by a shy pungency that mischievously grows to a medium.
This is an evoo created by Gonzalo Pin for his clients and with their help, which is the essence of Oli Oli. Thus, we are able to present our Premium extra organic oil with a consistent taste profile every year.
Pairing: this is a fresh, spring-y, exciting evoo… it awakens creativity in the kitchen, it has very good harmony and complexity which makes it ideal for any dish. I personally love it especially on raw fish and ceviche.
