Harvest
We harvest our Arbequina in mid-October, when the olive is in veraison. In respect to the olive tree and to insure the best quality of our product, we harvest the olives entirely by hand, gentley pulling the olives off the branch and into the basket.
Processing
Once the olives have been picked they are immediately brought to the mill. We follow rigorous quality controls during every stage to produce the olive juice for Organic Extra Virgin, first cold press.
Where we are
We are located inside a Nature Park, 850 meters above sea level. We enjoy a continental climate with a hint of Mediterranean influence. The soil is limy and permeable which facilitates the cultivation of olive trees and enhances the quality of the oil.

Tasting notes

Tasting requires a good amount of concentration, but when you have an evoo such as the Picual variety from Oli Oli, everything changes: the procession of aromas, in pleasant rhythm, instantly transports you to a relaxing walk through the olive grove guided by the setting sun.

Its intense green and ripe olive aroma is the opening, the conductor’s baton that marks the beat for notes of tomato, recently cut grass and fresh wood, future instruments in our pairings.

In the mouth the calm rhythm of this composicion created by Gonzalo situates the bitter and pungent in the medium range, and its Mediterranean gentleness is reiterated in the retronasal with notes of herbs and nuts.
The complexity and harmony of this evoo instantly transforms it into a musical cadence, a sonata.

For pairing, its rhythm resounds magestically in any sauté, tomato sauce, scrambled eggs with asparagus, and artichoke.
